Clean Eating Healthy Muffins
I modified this recipe quite a bit from one I found online. I searched LOTS of "healthy" zucchini muffin and bread recipes but found they all still used processed sugar and flour. I'm trying to cut back on carbs and I usually use raw honey as my sweetener so I created my own recipe. These are delicious and moist!! (sorry for those of you that don't like that word) Most of the recipes used 1 1/2cups of flour. I modified this by subsituting it with a combination of Almond meal, oat flour, whole wheat flour, and ground flax seed.

- about 1/2 cup 60% chocolate chips (I actually placed about 3 chips in each muffin)
- 1/2 cup applesauce (unsweetened)

- 1 tsp apple cider vinegar
- 1 1/2 tsp pure vanilla extract
