Watching Saturday Night Live a need a little snack? Try some quick and easy popcorn with sundried tomatoes and basil. This came out a lot better than I had expected. They always keep plain popcorn kernels around so I can make a healthy snack without the butter or fat. Tonight I decided to try different flavors and put some real ingredients on the popcorn instead of the cheese flavored seasoning. (Which is really good BTW)
Heat half of a tablespoon of olive oil in a pan that has a lid. Wait till the pan gets hot over medium, then add 3 tablespoons of unpopped popcorn kernels. Move the pan around to keep the kernels moving. Add pre-diced sun-dried tomatoes. Put the lid on the pan and continue to move the pan around so that all of the kernels keep moving. Do this over medium heat until most of the kernels have popped. Be sure to leave a little gap in the lid so air can get out or use a lid with an opening in it. Remove from heat and add dried basil salt and pepper.
Place popcorn in a bowl and move to the couch to continue watching Louis C.K. on Saturday Night Live.
